But before diving into the bold yet simple recipes, let’s spread a layer of rich background into the enigmatic vegetable that is at the root of a new, niche food movement — the next-generation condiment.

Horseradish, along with mustard, cauliflower, kale and wasabi, is a root vegetable from the cabbage family. Now, here are the two top recipes to get you up and cookin’ to celebrate National Horseradish Month this July – and beyond!

Recipe 1: Portobello Mushroom Burger

This meatless recipe is the perfect alternative for any food lover – vegetarian and, yes, even meat lovers (everyone loves a curve-ball from time to time).

Ingredients

  • 4 Portobello Mushroom Caps
  • ½ cup Dennis’ Original Horseradish
  • 4 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons rosemary
  • 2 teaspoons steak seasoning
  • 4 slices of Swiss cheese
  • 1/2 avocado, thinly sliced
  • 1 tomato, thinly sliced
  • 4 buns of choice

Step 1

In a large mixing bowl, whisk together vinegar, soy sauce, rosemary, steak seasoning, and Dennis’ Horseradish.

Step 2

Place mushroom caps in the bowl and evenly coat with the marinade. Let the mushrooms marinate for about 30 minutes, turning them occasionally.

Step 3

Heat up a grill or skillet. Once hot, place the mushrooms on the grill and cook for about 6 minutes, occasionally brushing them with left over marinade.

Step 4

While the mushrooms are still cooking, top each with a slice of Swiss cheese. Continue to cook the mushrooms for about a minute, or until the cheese is nicely melted.

Step 5

Once done cooking, serve on your bun of choice along with avocado, tomato, and any other desired toppings. If any meat lovers insist on remaining carnivorous, well, that can be arranged!

Recipe 2: Blue Cheese Horseradish Hamburger

If you want to make a bold statement at your summer barbecue, this simple recipe is the one for you. The unexpected combination of blue cheese and horseradish will take your burger to the next level with its daring and tasty spice.

Ingredients

  • 1 ½ pound ground beef
  • ½ cup Dennis Original Horseradish
  • 1 tablespoon Dennis Horseradish Mustard
  • 1 tablespoon tarragon
  • Vegetable oil of choice
  • 4 oz. crumbled blue cheese
  • 2 tablespoons Dennis Original Horseradish

Step 1

In a medium bowl mix together beef, horseradish, mustard, and tarragon.

Step 2

Divide mixture into 4 evenly sized balls.

Step 3

Flatten each ball into a round patty.

Step 4

Oil a skillet and cook each burger for about 3 minutes.

Step 5

Flip the burgers and top with blue cheese. Cover and continue to cook for about 4 minutes more (medium-rare).

Step 6

Once the burgers have finished cooking, serve the 2 tablespoons of Dennis Original Horseradish along with your favourite toppings and enjoy!
